Ripe raspberries come off with a gentle lift, and the receptacle stays on the plant. That hollow core is how you tell a raspberry from a blackberry. [1] Killarney and Jewel are this hollow pick, even though Jewel is black. Natchez keeps its core. Wait until blackberry fruit loses its shine. Bramble fruit can keep developing flavor after you pick it, but it does not get sweeter. Leave a berry that still tugs. [2]

When is a raspberry ripe?

When it is fully colored and slips off easily, leaving the core on the plant.

When is a blackberry ripe?

When it is dull, not shiny, and comes off with almost no pull. The white core stays in the berry.

How to harvest and store brambles

Pick often. Cool the fruit the same day. Wash it only when you eat it.

  1. Walk the row every two to four days while raspberries are coloring. Blackberries need a pass about every three to five days. Overripe fruit draws beetles. [3]
  2. Pick in the morning after the dew has dried. Roll ripe berries into a shallow bowl, no more than two or three berries deep. Leave fruit that still tugs. [4]
  3. Refrigerate unwashed fruit the same day. Raspberries keep about two to three days in the cold. Blackberries keep a little longer. Wash just before you eat them. Cover the container in the fridge so condensation does not sit on the fruit.

Yellow raspberries such as Anne use the same hollow pick as red. They bruise and discolor faster, so keep those bowls even shallower. Pull any fruit that has dropped onto the mulch; beetles breed in it. A deep, warm bowl crushes the bottom layer before you reach the kitchen.

If a berry still tugs, leave it — it is not ripe yet.

FAQ

Can I freeze raspberries?

Yes. Freeze them dry, in a single layer, then bag them. Wash just before you use them.

Why is the blackberry still tart?

It was picked while it was still shiny. Wait until the fruit turns dull, then taste one before you strip the cluster.
